  • 1/3 cup butter or margarine melted
  • 3 tablespoons sugar
  • 1 can 14 oz sweetened condensed milk
  • 1/2 cup Key lime juice
  • 1 container 8 oz frozen whipped topping, thawed

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a food processor, finely crush graham crackers. In a medium bowl, combine crushed graham crackers, melted butter, and sugar.
  • Press the graham cracker mixture firmly and evenly into the bottom and up the sides of a 9-inch pie plate.
  • Bake the crust for 8-10 minutes, or until lightly golden. Remove from oven and let cool completely on a wire rack.
  • While the crust cools, in a large mixing bowl, whisk together the sweetened condensed milk and Key lime juice until thoroughly combined and slightly thickened.
  • Pour the Key lime filling into the cooled graham cracker crust, spreading evenly with a rubber spatula.
  • Refrigerate for at least 3-4 hours, or until the pie is completely set.
  • Once chilled and set, spread the thawed whipped topping evenly over the pie before serving.
  • Garnish with additional lime zest or thin lime slices, if desired, for presentation.
  • Slice and serve chilled.

For a truly authentic flavor, always opt for fresh Key lime juice; the bottled variety often lacks the vibrant acidity and distinct aroma. If fresh Key limes are unavailable, regular lime juice can be substituted, but adjust sweetness as needed. Ensure your graham cracker crust is pressed very firmly into the pie plate to prevent crumbling upon serving, and a short bake helps set it beautifully. Chill the pie for the recommended time, as proper setting is crucial for a clean slice and optimal texture. For an elevated finish, consider making fresh whipped cream instead of frozen topping, lightly sweetened to complement the tart lime.
