  • 28 ounces fresh ground spicy pork sausage
  • 1 cup uncooked long-grain rice
  • 1 slice onion diced
  • 3 cloves garlic minced
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1 28 ounce can whole peeled tomatoes, crushed
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper

Instructions
 

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Brown sausage in a skillet over medium-high heat; drain grease. Add rice, onion, garlic, and peppers; cook and stir for 5 minutes. Stir in tomatoes, chicken broth, salt, pepper, and cayenne pepper. Transfer into a 9x13-inch baking dish.
  • Bake in the preheated oven until rice is tender and most of the liquid is absorbed, about 1 hour.

Notes

1. Achieving a deep brown on your ground sausage is crucial for flavor; don't just cook it through. The fond (brown bits) left in the pan will contribute significantly to the casserole's depth. 2. Toasting the rice briefly with the aromatics (step 4) develops a nuttier flavor and helps it absorb liquid more evenly, preventing a mushy texture. 3. Adjust the cayenne pepper to your desired spice level; a pinch of smoked paprika could also add a wonderful layer of flavor complexity. 4. Allow the casserole to rest for 5-10 minutes after baking. This crucial step lets the rice fully absorb residual moisture and set, resulting in a perfectly textured dish. A sprinkle of fresh cilantro or parsley before serving brightens the plate.
